Pimentón de la Vera is the smoked paprika behind chorizo, pulpo a la gallega and countless Spanish dishes, dried slowly over oak fires in the La Vera region of Cáceres. La Chinata is the export-famous brand, and the smoky sweet powder is quite different from the plain sweet mletá paprika on Czech shelves, which makes a tin a genuinely useful Spanish pantry take-home.
